Mike Gilliland has been involved in the natural and organic food business for 24 years. He co-founded Wild Oats Markets and served as its Chief Executive Officer from 1987 to 2001, growing the company from a single store in Boulder, Colorado to a billion dollar publicly-traded enterprise with 115 stores throughout the US and Canada. In 2002, Mike founded Sunflower Farmers Markets which operates natural foods supermarkets throughout the southwestern US. He serves as the company’s Chief Executive Officer and Chairman. Mike has received numerous awards and commendation including the 1992 Esprit Entrepreneur Award and the 1998 Rocky Mountain Ernst and Young Entrepreneur of the Year Award. He attended the US Air Force Academy, the University of Grenoble in France, and received a Bachelor of Arts degree in history from the University of Colorado. Mike is a former director of the Organic Trade Association and a benefactor of the Community Foundation of Boulder County.

She talks with Moby about his new book, Gristle. Moby was born in new york city, but grew up in connecticut, where he started making music when he was 9 years old. he released his first single, 'go' in 1991(listed as one of rolling stones best records of all time), and has been making albums ever since. his own records have sold over 20,000,000 copies worldwide, and he's also produced and remixed scores of other artists, including david bowie, metallica, the beastie boys, public enemy, among others. Moby has toured extensively, playing well over 3,000 concerts in his career. he has also had his music used in hundreds of different films, including 'heat', 'any given sunday', 'tomorrow never dies', and 'the beach', among others. Currently he's touring in support of his most recent album, 'wait for me', as well as working closely with a variety of different charities, including the humane society and the institute for music and neurologic function. Moby recently edited a collection of meat-related essays entitled Gristle. Moby's simple agenda: to end animal suffering.

He is a professional member of the American Herbalists Guild. He was the founder and director of the Maui Holistic Health Center. Chef Tal Ronnen is one of the most celebrated vegan chefs working today. In the spring of 2008, he became known nationwide as the chef who prepared vegan meals for Oprah Winfrey's 21-day vegan cleanse. He has since catapulted to fame, catering Ellen DeGeneres and Portia de Rossi's vegan wedding, Arianna Huffington's party at the Democratic National Convention, and the first vegan dinner at the U.S. Senate.   A graduate of the Natural Gourmet Institute, Chef Tal has worked at the top vegan restaurants in the United States, including Sublime in Fort Lauderdale, Madeleine Bistro in Los Angeles, and Candle 79 in New York City. He also assisted Chrissie Hynde of The Pretenders in opening her restaurant, VegiTerranean in Akron, Ohio, in 2007. Additionally, Chef Tal conducts master vegetarian workshops for students and staff at Le Cordon Bleu College campuses nationwide.

William Harris, M.D., an E.R. physician, hang glider, sailplane pilot, parachute jumper, and former Big Ten Trampoline Champion, says his toughest challenges come from battling the U.S. Department of Agriculture (USDA) and other dominant forces working against America's good health. In 1998, he wrote The Scientific Basis of Vegetarianism and sent it to every member of the U.S. Congress to "educate them about the adverse effect of animal agriculture subsidies."

Dr. Klaper is a physician with training in surgery, anesthesiology, orthopedics, emergency room medicine and obstetrics. Dr. Klaper is the Director of the non-profit Institute of Nutrition Education and Research and has performed research on the pros and cons of vegan nutrition and other dietary styles of health enthusiasts. He also is a member of the Nutrition Task Force of the American Medical Student Association. Dr. Klaper graduated from the University of Illinois College of Medicine in Chicago in 1972. He Served his medical internship at Vancouver General Hospital in British Columbia, Canada and had additional training at the University of California Hospitals in San Francisco. Dr. Klaper has contibuted to the making of two PBS television productions, "Food for Thought," and the award winning, "Diet for a New America." Dr. Klaper has served as advisor to the National Aeronautics and Space Administration (N.A.S.A.) project on nutrition for long-term space colonists on the moon and on mars. Dr. Klaper believes strongly that proper nutrition and a balanced lifestyle are essential for health, and in many cases make the difference between healing an illness or merely treating the symptoms.
